One Pot Chicken And Rice Recipe
Ingredients:
- Basmati rice (can be swapped for jasmine rice or long-grain rice)
- Bone-in skinless chicken thighs
- Mixed herbs (Italian seasoning or herbs de Provence as alternatives)
- Smoked paprika (sweet paprika can be used as a substitute)
- Salt and black pepper
- Onion powder
- Garlic powder
- Olive oil (or any other cooking oil like vegetable, coconut, or avocado oil)
- Unsalted butter
- Low sodium chicken stock
- Green onions for garnish (substitute with chives, parsley, or coriander)
Instructions:
- In a small bowl, mix smoked paprika, mixed herbs, garlic powder, onion powder, salt, and black pepper.
- Rinse the rice until the water runs clear and set aside.
- Coat the chicken thighs with the seasoning mixture reserving about a teaspoon for later use.
- Heat 2 tablespoons of olive oil over medium-high heat in a pot. Add the chicken thighs, skin side down, and sear each side for about 3 minutes until golden brown. Remove the chicken and set aside.
- In the same pot, sauté chopped onions until soft. Add the rinsed rice and toast for a couple of minutes.
- Add the chicken stock, reserved seasoning, and stir well while scraping the bottom of the pot to deglaze.
- Position the chicken thighs on top of the rice. Cover the pot and cook on low-medium heat for 15-20 minutes, depending on the rice type.
- Once the rice is tender and the liquid is absorbed, garnish with chopped green onions. Let it sit covered for an additional 3 minutes.
- Fluff the rice with a fork before serving.
Additional Tips:
- Add a squeeze of lemon or lime for a zesty flavor.
- Stir in spinach or frozen vegetables towards the end of cooking for an added nutritional boost.
This recipe is not only delicious but also simple and quick, making it perfect for a busy weeknight dinner. Enjoy your meal preparation!
