- English Muffins: 2, halved
- Butter: Unsalted, for toasting the English muffins
- Meat: Canadian Bacon (or thinly shaved ham, or crispy bacon)
- Eggs: 4 large, grade AA (super fresh)
- White Vinegar: Distilled, added to the water for poaching eggs
- Garnish: Cayenne pepper, chives or dill
Directions:
Prepare Hollandaise Sauce: Follow Natasha’s instructions to prepare the sauce. Keep it covered and warm, adding a little hot water if it needs to be thinned.
Prepare for Poaching Eggs: Heat a pot of water to a gently simmer.
Sauté Meat: In a large skillet, sauté the meat until it is warm and slightly golden. Remove and cover to keep warm.
Toast English Muffins: Using the same skillet, melt 2 teaspoons of butter and place the English muffins cut-side down. Toast until golden brown. Turn off the heat but leave the muffins in the skillet to stay warm.
Poach Eggs: When the water is barely simmering, poach the eggs according to the instructions provided in her easy poached eggs recipe.
Assemble: Place the toasted English muffin halves on plates, top each with the prepared meat, and then a poached egg. Drizzle generously with Hollandaise sauce, sprinkle with cayeenpe pepper, and garnish with chives or dill.
Serve Immediately
Natasha mentions that this dish is best enjoyed fresh, though the Hollandaise sauce can be kept warm while preparing the other ingredients.
Note: For variations on the classic, you can experiment with adding ingredients like tomato, avocado, smoked salmon, or even asparagus.
