- 4 small boneless skinless chicken breasts (or 2 large, halved lengthwise)
- 16 fingerling potatoes, halved lengthwise
- ½ cup low sodium chicken broth
- ½ cup heavy cream
- 2 tablespoons corn starch
- 1 teaspoon basil pesto
- 1 teaspoon salt
- 2 cloves garlic, minced
- ¼ teaspoon black pepper
- ½ cup roasted red peppers (jarred, diced)
- 1 cup fresh spinach, roughly chopped
- 2 tablespoons freshly grated Parmesan cheese
Instructions
- Prepare the Potatoes and Chicken: Halve the fingerling potatoes lengthwise. Place the chicken breasts and halved potatoes into a 3-4 quart crockpot.
