Blistered Shishito Peppers Recipe
Ingredients:
- Shishito Peppers
- Avocado Oil (for cooking)
- Lemon Juice (for serving)
- Flakey Sea Salt (for serving)
For the Garlicky Aioli Sauce:
- High-quality Mayonnaise
- Lemon Juice
- Garlic, minced
- Sea Salt
- Smoked Paprika
Instructions:
- Prepare the Aioli Sauce:
- Combine high-quality mayonnaise, lemon juice, minced garlic, sea salt, and smoked paprika in a bowl. Adjust the ingredients according to taste. Once mixed, set the sauce aside for serving.
- Cook the Peppers:
- Thoroughly wash and dry the shishito peppers to ensure no water is left on them (to prevent steaming instead of blistering).
- Heat some avocado oil in a large cast iron or non-stick skillet over medium-high heat. Wait until the oil is shimmering and very hot before adding the peppers.
- Add the peppers in a single layer. Let them sit for about 30 seconds to char and blister before tossing. Continue cooking, tossing every 30 seconds, until the peppers are charred all over and have softened slightly.
- They’re done when charred on all sides, bright green, and slightly softened but still holding their shape.
- Finishing Touches:
- Squeeze fresh lemon juice over the blistered peppers and sprinkle flaky sea salt over them. Serve immediately with the garlicky aioli sauce.
Serving Suggestions:
Blistered shishito peppers can be enjoyed as a snack or a side dish to proteins like chicken, steak, pork, sausages, or seafood.
Notes:
- Shishito peppers are mostly mild, but around 1 in every 10-20 peppers might have a bit more spice.
- If you can’t find shishito peppers, padron peppers are a great substitute but cook them for a lesser time due to their thinner skin and be prepared for a bit more heat.
To make this recipe vegan, substitute the mayonnaise in the aioli sauce with a vegan mayo or a vegan yogurt.
