To Serve:

  • 2 medium carrots, peeled and cut into 2-inch (5 cm) pieces
  • 2 sticks celery, cut into 2-inch (5 cm) pieces

Instructions

Preparing the Chicken Wings:

  1. Preheat the Oven:
    • Preheat your oven to 120°C/250°F (fan-assisted).
    • Place a rack on a large baking tray. This will help the wings cook evenly and become crispy.
  2. Prepare the Chicken Wings:
    • Cut each wing at the joint to separate it into a mini wing and a drumette.
    • Pat the wings dry with paper towels. Dry wings ensure a crispier result.
    • Place the wings in a large bowl.
  3. Season the Wings:
    • Add 2 level tablespoons of aluminum-free baking powder, ½ teaspoon of salt, and ½ teaspoon of pepper to the bowl.
    • Toss the wings thoroughly to ensure they are evenly coated in the baking powder, salt, and pepper. Discard any remaining coating.
  4. Bake the Wings:
    • Arrange the wings in a single layer on the rack, skin side up. It’s okay if they touch, but ensure they are mostly in a single layer.
    • Place the tray on the lower shelf of the preheated oven and bake for 30 minutes.
  5. Increase Oven Temperature:
    • After 30 minutes, increase the oven temperature to 220°C/425°F (fan-assisted).
    • Rotate the tray to ensure even cooking.
    • Bake for an additional 45-50 minutes until the wings are lightly golden and crispy.
    • Remove the wings from the oven and let them cool slightly.

Preparing the Buffalo Sauce:

  1. Combine Ingredients:
    • In a pan, add 150 ml (2/3 cup) Frank’s hot sauce, 120 g (1/2 cup) unsalted butter, 1 tbsp cider vinegar, 1 tsp Worcestershire sauce, 2 cloves garlic (minced), 1 tbsp honey, and ¼ tsp salt.
  2. Cook the Sauce:
    • Place the pan over medium-high heat.
    • Stir continuously and bring the mixture to a gentle simmer.
    • Once simmering, turn off the heat and set the sauce aside.

Preparing the Blue Cheese Sauce:

  1. Mix Ingredients:
    • In a bowl, combine 120 g (1/2 cup) sour cream, 3 tbsp mayonnaise, 75 g (1/3 cup) soft blue cheese, ½ tbsp cider vinegar, ½ tsp Worcestershire sauce, and a pinch of dried parsley.
  2. Blend Until Smooth:
    • Mix the ingredients together until the sauce is smooth and well incorporated.

Serving the Dish:

  1. Toss Wings with Buffalo Sauce:
    • Gently toss the crispy chicken wings with the prepared Buffalo sauce until they are well coated.
  2. Serve:
    • Arrange the sauced wings on a serving platter.
    • Serve with a side of blue cheese sauce, carrot sticks, and celery sticks.

Enjoy your deliciously crispy and flavorful chicken wings with these perfect accompaniments!

Tips and Tricks

  • Pat the wings dry thoroughly with kitchen towels before seasoning. This helps in reducing the moisture content for a crispier outcome.
  • Use baking powder (not baking soda) as specified in the recipe. This is crucial for drawing moisture out of the skin to get it crispy in the oven.
  • Cooking the wings at a low temperature initially, then cranking up the heat helps in rendering the fat while finishing with a crispy skin.
