Ingredients

  • Chicken Breast: Cut into 2 thinner slices and pounded to 1/4 inch thin.

  • Chicken Broth, Chicken Bouillon, & Mustard Powder: For the sauce flavor.

Instructions

  1. Prepare the Chicken: Cut the chicken into thinner slices, put them in a gallon freezer bag or between saran wrap, and pound to 1/4 inch thin. Pat dry and dredge in seasoned flour/Parmesan mixture. Heat olive oil in a skillet and sear the chicken in batches, 4-5 minutes per side. Remove chicken and set aside.
  2. Make the Sauce: In the same pan, add white wine and garlic. Let it simmer gently to reduce by half, scraping the bottom of the pan. Add chicken broth, bouillon, and mustard powder. Bring to a gentle boil and reduce for about 5 minutes. Lower the heat and stir in the cream. Add lemon juice, then gradually sprinkle in Parmesan, stirring continuously.
  3. Combine: Return the chicken to the pan, spooning sauce over it. Let it heat through and thicken. Optionally, cook up to 3/4 lb. spaghetti, mix it into the sauce, and serve the chicken on top.
  4. Serve: Garnish with parsley and sliced lemon.

  • Use fresh garlic to avoid it turning blue in the acidic sauce.
  • Fresh lemon juice and good quality Parmesan (like Belgioioso) recommended for best flavors.
