Ingredients
For Dressing
- 1 clove of garlic
- 1/4 cup flat-leaf parsley
- 1/4 teaspoon kosher salt
- 2 tablespoons fresh chives
- 1/4 cup pickled jalapeños
- 1/2 cup buttermilk
For Salad
- 3 tablespoons taco seasoning or a 1-ounce storebought packet
- 1 pound top sirloin steak
- 2 Roma tomatoes diced
- 2 ears of corn
- 1 avocado sliced
- 1/2 red onion diced
- 1 cup black beans
- 2 heads of romaine lettuce chopped
Instructions:
- Prepare the Dressing: Blend the ingredients for the Jalapeño Ranch Dressing in a blender. Adjust the seasoning as needed and set aside.
- Season the Steak: Apply a dry rub of taco seasoning on the sirloin steak. Make sure the steak is coated evenly with the seasoning.
- Preheat the Grill: Warm up your grill in preparation for the steak and corn.
- Grill the Corn and Steak: Place the seasoned steak and corn on the grill. Cook the steak to your desired doneness, taking it off the grill at 130°F for medium-rare, 140°F for medium, 150°F for medium-well, or 160°F for well-done. Use an instant-read thermometer to check the temperature accurately. Grill the corn until it has good char marks.
- Rest the Steak: Allow the grilled steak to rest for about 10 minutes before slicing. This helps the juices redistribute throughout the meat.
- Combine Salad Ingredients: Slice tomatoes, cube avocado, dice red onion, and rinse black beans. Combine these with your greens of choice in a large salad bowl.
- Assemble the Salad: Add the sliced rested steak and charred corn to the salad.
- Serve: Drizzle with the Jalapeño Ranch Dressing right before serving.

Tips and Tricks
- The recipe benefits from using a dry rub on the steak rather than a marinade.
- Top sirloin is recommended for its blend of flavor and tenderness, though ribeye is an excellent alternative if you prefer something a bit fattier.
- For a lower carbohydrate version of the salad, simply omit the corn. The steak and other vegetables will still be satisfying and flavorful.
- If you enjoy a bit more spice, consider adding pickled jalapeños to the salad for an extra kick.
