INGREDIENTS

Sweet Potato Fries

  • 3 large sweet potatoes, peeled and cut into 1/4-1/2 inch strips
  • 2 tbsp olive oil, extra virgin
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Garlic Aioli Sauce

  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 tbsp olive oil, extra virgin
  • 1 1/2 tbsp garlic powder
  • 1 tbsp fresh parsley
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

INSTRUCTIONS

Sweet Potato Fries

  • Preheat oven to 420°F. Line a baking sheet with parchment paper and set aside.
  • Add sweet potato strips to a large mixing bowl and sprinkle with cornstarch. Drizzle with olive oil and stir potatoes until evenly coated.
  • Season potatoes with garlic, paprika, salt, and pepper, stirring to make sure each fry is well seasoned.
  • Add fries to the baking sheet, making sure there’s space between each fry. Bake for 15 minutes. Using a spatula, turn the fries over. Bake for an additional 15 minutes or until golden brown on top.
  • Remove from oven and serve while still warm with garlic aioli dipping sauce.

Garlic Aioli Sauce

  • Add mayo, lemon juice, olive oil, garlic powder, fresh parsley, cayenne pepper, salt, and black pepper to food processor.
  • Blend until all ingredients are mixed well together.
    Refrigerate for 30 minutes (or more) and serve chilled.
