INGREDIENTS
Sweet Potato Fries
- 3 large sweet potatoes, peeled and cut into 1/4-1/2 inch strips
- 2 tbsp olive oil, extra virgin
- 1 tbsp cornstarch
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
Garlic Aioli Sauce
- 1 cup mayonnaise
- 2 tbsp lemon juice
- 2 tbsp olive oil, extra virgin
- 1 1/2 tbsp garlic powder
- 1 tbsp fresh parsley
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
INSTRUCTIONS
Sweet Potato Fries
- Preheat oven to 420°F. Line a baking sheet with parchment paper and set aside.
- Add sweet potato strips to a large mixing bowl and sprinkle with cornstarch. Drizzle with olive oil and stir potatoes until evenly coated.
- Season potatoes with garlic, paprika, salt, and pepper, stirring to make sure each fry is well seasoned.
- Add fries to the baking sheet, making sure there’s space between each fry. Bake for 15 minutes. Using a spatula, turn the fries over. Bake for an additional 15 minutes or until golden brown on top.
- Remove from oven and serve while still warm with garlic aioli dipping sauce.
Garlic Aioli Sauce
- Add mayo, lemon juice, olive oil, garlic powder, fresh parsley, cayenne pepper, salt, and black pepper to food processor.
- Blend until all ingredients are mixed well together.
Refrigerate for 30 minutes (or more) and serve chilled.
