Easy Chicken Caprese Recipe For Dinner Time

Chicken Caprese Recipe

Ingredients:

  • 4 skinless chicken breasts
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil, divided
  • 3 large cloves garlic, minced
  • 2 pints cherry tomatoes, halved
  • 10 large basil leaves, finely chopped
  • 8 oz fresh buffalo mozzarella, sliced in 1/2 inch thick slices
  • Balsamic vinegar, to taste for garnish

Instructions:

  1. Season both sides of the chicken breasts with salt and pepper and set aside.
  2. In a large sauté pan over medium-high heat, warm 1 tablespoon of olive oil. Add the chicken, cover the pan, and cook for about 10 minutes. Flip the chicken breasts and continue cooking until the chicken is thoroughly cooked, reaching an internal temperature of 165°F.
  3. Remove the chicken and place it on a plate, then cover with foil. Add the remaining tablespoon of olive oil to the sauté pan. Add the minced garlic and cook for about 1 minute or until fragrant, scraping up all the little bits of chicken left in the pan.
  4. Add the halved tomatoes and continue sautéing until their skin starts to soften/wrinkle, about 5 minutes. Stir in the basil and quickly place the chicken back in the pan. Top each chicken breast with 2 slices of mozzarella cheese.
  5. Cover the pan with a lid and let the mozzarella melt for about 1-2 minutes. Drizzle with a splash of balsamic vinegar and serve immediately!
