Tempura Batter for Chicken:
Ingredients:
- Self-rising flour
- Oil
- Cornstarch
- Salt
- White or black pepper
- Egg
- 1 1/2 cups icy cold water
Instructions:
- Cut the chicken breast into bite-sized chunks.
- In a large bowl, mix the self-rising flour, oil, cornstarch, salt, pepper, and egg together. Gradually add 1 1/2 cups icy cold water until you achieve a pancake batter consistency.
- Add the chicken pieces to the batter a few at a time, ensuring they are well coated.

Tip: Keep the fried chicken warm in an oven set to a low temperature (around 200°F or lower) on a cake rack over a cookie sheet to maintain crispiness.
Vegetables:
- Sauté your choice of vegetables until slightly tender but still crispy. Set aside.
Assembly:
- On a large platter, place fried chicken pieces.
- Top with sautéed vegetables and pour the sweet and sour sauce over the top.
