Easy Coconut Jasmine Rice Recipe

Infused with creamy coconut milk and delicate jasmine rice, this quick and tasty dish offers soft, tender, and perfectly separated grains with a hint of nutty coconut. It’s versatile enough to complement any main dish and easy to prepare using the stovetop, rice cooker, or Instant Pot.

Ingredients

  • 1 (14 oz) can of unsweetened coconut milk (full fat) – preferably Thai-style, I like the Thai Kitchen brand
  • 2 cups uncooked jasmine rice
  • 1 ½ cups water
  • ¾ teaspoons Kosher salt

Instructions

Step 1: Rinse the Rice

  • Rinse jasmine rice thoroughly with cold water using a colander.
  • Use your hands to gently swirl the rice around.
  • Set the rinsed rice aside.

Step 2: Prepare the Coconut Milk

  • Open the can of coconut milk.
  • If the coconut milk appears separated, stir it with a spoon until it’s evenly combined.

Step 3: Combine Ingredients

  • In a medium saucepan, combine the coconut milk, the required amount of water, and salt.
  • Place the saucepan over medium heat and bring the mixture to a low boil.

Step 4: Cook the Rice

  • Add the rinsed rice to the boiling mixture and give it a quick stir.
  • Bring the mixture to a boil again, then reduce the heat to a low simmer.
  • Cover the saucepan with a lid and let it simmer for 18-20 minutes, or until all the water is absorbed and the rice is tender.

Step 5: Rest and Serve

  • Remove the saucepan from heat and let it sit, covered, for another 8-10 minutes.
  • Fluff the rice with a fork and serve.

Enjoy your Coconut Jasmine Rice!
