When I serve Michael Angelo’s Eggplant Parmesan for meatless Monday, I envision that I am heating up leftovers from a big family feast at Aunt Maria’s house. Mom made the tomato sauce from hand selected, vine-ripened tomatoes and her cousin supplied the fresh eggplant from his farm. Aunt Maria always keeps imported cheeses like Parmigiano Reggiano & Pecorino Romano on hand and it completes this dish beautifully. Although this may sound far fetched, it’s easy to imagine because you can taste the authenticity in every bite. That’s what real, quality ingredients can do!

So, my friends, in the spirit of simplicity, I’m proud to give my endorsement to Michael Angelo’s. It’s my “go to” preservative-fee meal plan for busy weeknights. There’s nothing artificial in these dinners, just pure deliciousness – ready in minutes. My family approves. Can you tell?

This crustless cheesecake recipe, however, is quite the exception to that rule. It's surprisingly yummy and the fact that it's only 100 calories per slice, makes this tofu cheesecake a total winner.
