My mom always orders key lime pie at restaurants. The place could be famous for their giant chocolate volcano dessert or what have you but Mom will get the key lime pie 100% of the time if it’s on the menu over any other available option. Being the fabulous daughter that I am, I decided to make her a key lime cake for her birthday this year.

Mom seemed to be thrilled at the idea of having her favorite dessert made into a cake!

It's the perfect combination of tangy and sweet!First things first, I looked to Pinterest to gather some recipe ideas. I did find a few key lime cake recipes online. Trisha Yearwood (who I adore) has one and I read through a few others but none of them had that wow factor that you want in a birthday cake.

So I took a little of this and a little of that and I came up with my own key lime cake recipe. It’s 4 layers of moist lime cake with a sweet and tangy lemony glaze in between the layers. Even the whipped icing has the perfect hint of lime!

Key Lime Cake

  • 3-oz package lime-flavored gelatin
  • 1.5 cups granulated sugar
  • 2 1/2 cups sifted all-purpose flour
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 1 tsp baking soda
  • 5 large eggs, slightly beaten
  • 1 3/4 cups vegetable oil
  • 1 cup orange juice
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • zest of 2 limes
  • green food coloring
  • Glaze: 3/4 cup key lime juice + 3/4 cup confectioners' sugar
  1. Preheat the oven to 350°F. Heavily grease and flour four 8x2 inch round cake pans.
  2. In a large bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda. Stir to mix well.
  3. Add the eggs, oil, orange juice, lemon juice, vanilla, and lime zest.
  4. Add green food coloring as desired.
  5. Divide the batter evenly among the 4 pans and bake for 25 to 30 minutes.
  6. Test for doneness by inserting a toothpick. Cool the layers in the pans for 5 minutes, then turn them out onto racks.
  7. While the layers are still hot, mix the lime juice and confectioners’ sugar for the glaze.
  8. Use a fork to poke hole into the four cake layers. Pour the glaze over the layers on the racks.
  9. Allow the layers to cool completely as you prepare the icing.
  10. Ice all four layers as you stack them to create the cake. Ice the top and sides of the cake.
  • Preparation time: 20 minutes
  • Cook time: 25 minutes
  • Total time: 45 minutes

The first time I made this cake recipe, I used buttercream icing. I found the icing to be a little heavy for this light cake. Now I like to use a whipped icing. I enjoy the consistency and sweetness of the whipped icing much better!

Here’s is the icing recipe I like to use for key lime cake.

Whipped Lime Icing

  • 1 (8 ounce) package reduced-fat cream cheese, softened
  • 1/2 cup white sugar
  • 2 cups heavy cream
  • 1 tsp vanilla extract
  • zest of 2 limes
  1. Combine the cream cheese, sugar, vanilla extract. and lime zest in a large mixing bowl or the bowl of a stand mixer.
  2. Fit the mixer with the whisk attachment and mix on medium speed until smooth.
  3. While the mixture is still whipping, slowly pour in the heavy cream.
  4. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.
